Nebbiolo is the most important Piedmontese red grape and is a sensitive variety which is extremely demanding in terms of environment, soil and climate. The grape harvest take place in mid-October, when the autumn fog envelops the hills, and this is where the name originates, the Italian word for fog being nebbia.
Vinification is traditional with 15 days’ maceration. This is followed by malolactic fermentation and ageing in steel vats to obtain a great bouquet and an intense flavour.
